In Vietnamese meal, we often have salad as starter to stimulate the appetite with good balance of salty and spicy, sweet and sour taste. Salad is also super healthy because it is a combination of varieties of fresh vegetables, herbs, spices and peanuts.

We have many different versions of salad like mango salad, lotus salad, banana flower salad… Now we will show you how to make one of the most popular salads in Viet Nam – the Papaya salad, Vietnamese name is “Gỏi Đu Đủ”.

Ingredients:


The ingredients are: carrot, green papaya, Vietnamese mint, chili, coriander, garlic, lime, tamarind, mushroom, leek, vegan fish sauce, sesame seeds, peanuts, salt, sugar, pepper.

The recipe:

Step 1:

At first, peel up the green papaya and carrot into thin strips. Put in a same bowl. 

Then add 1 teaspoon of salt and some ice cubes into. Let it sit there for 15 minutes to make the texture harder.

Step 2:

Slice up the leek, cut the mushroom into slices. 

Heat the pan with little vegan oil and put the minced leeks. 

When you feel quite fragrant, put the mushroom into and stir it frequently. Cook for about 2 minutes.

 Step 3:

Then we make the sauce. With the salad, the sauce plays an important role to decide the food good or not. So you need to make the sauce perfectly.

At first, add a little bit of hot water into tamarind paste and wait 3 minutes to release the sour liquid. Then, mash garlic, chilies, a little bit sugar and salt together until you get a paste. Add 4 tablespoons tamarind liquid, 2 tablespoon vegan fish sauce, 1 teaspoon pepper, add a little bit lime juice, and stir it.

Tamarind and lime juice will make the salad have a nice sour taste. The vegan fish sauce smell lightly salty but the flavour is intense.

 Step 4:

Take the water out of the sliced papaya and carrot, then give it a massage. This will make the salad easier to absorb with the sauce. Wash it again and let it dry.

Then, add the stir fried mushroom and Vietnamese mints into. Pour the sauce over the sliced green papaya and carrot, then mix everything together. You can taste the salad again and add more sauce until you feel good.

Step 5:

Serve the salad with some roasted peanuts, rice cracker, a dash of sesame seeds and decorate with a chili on top. 

When eating, put a bit of salad on a piece of rice cracker to make the dish crunchy and tasty.
